We have some really yummilicious and super quick Diwali sweet recipes for you today. And as with a lot of our blog posts, there’s a story behind this too.

When it comes to entertaining most of my friends first think, ‘What should I make?’ My first thought usually is, ‘How should I decorate?’ If I have time left from getting the decor done, I’ll make some food. Else, I just order in.

When ‘making food’ lies at the end of my to-do list, you can imagine where ‘making desserts’ fits in. It doesn’t. It is a far fetched fantasy that doesn’t exist in reality at all. I have honestly, never made dessert. And I never thought I would ever want to.

But being on social media has been quite a revelation to me. I thought I was getting on to promote my blog and inspire others with my ideas. Instead, I have been inspired in so many ways by so many people along the way. Today I will introduce you to 3 of them. These amazing bloggers make food look like a work of art.. and make the recipes sound like child’s play. Easy enough that I was actually tempted to give it a try. And what better time than Diwali to try a hand at sweets?

Super Easy Diwali Sweet Recipes:

So I requested them to send me really easy-peasy Diwali sweet recipes.. the type I wouldn’t be scared of trying. And they did.

And I know there are many more of you like me, out there… too busy with work, kids, families and life in general… and too scared of the time and effort it takes to make desserts to even bother to give it a try. So this one is for all of you.. and for me too. Let’s make it one sweet Diwali!

Swayampurna | Lapetitchef

The first of our easy Diwali sweet recipes is by Swayam. Swayam is a banker by profession and a food blogger by passion. When I asked her for a simple Diwali sweet recipe, she sent me four! I thought that made my life really easy. Four to choose from, right? How cool is that.

It actually made it quite difficult. HOW do you choose one from four awesome recipes!? (Maybe I should just put all four. Maybe I should write a food blog instead.. with borrowed recipes!)

What eventually made me choose this one was that it said it takes about 10 minutes to make. Astonishing for someone like me, who associates making Diwali sweets with spending the whole day in the kitchen. So let me just hand it over to her…

Pineapple Sandesh With Orange Zest & Saffron:

3 Quick and Easy Diwali Sweet Recipes

Spiked pineapple sandesh with orange zest and saffron is my solution to all your festive eating problems. This spectacularly easy and simple sandesh won’t make you guilty about gorging on desserts at all! It is refreshingly light, perfectly healthy with cottage cheese and honey (no sugar) and it takes barely 10 mins to put together!

INGREDIENTS:

For the Pineapple Sandesh
– 4 pineapple rings I used canned ones.
– 1 cup chenna or cottage cheese (to make at home boil 1/2 milk with the juice of 1 lemon. Stir and let it cook on low heat till it curdles and cheese starts to form. Switch off the heat, drain the whey and press the whey out of the cheese. Keep aside till use)
– 2 tbsp Fresh cream
– 2 tbsp organic honey
– 3-4 cardamom crushed
– zest of 2 orange

For Garnish:
– pinch of saffron soaked in a little water for 2-3 mins
– 2 tsp coconut slivers
– 2 tsp almond flakes
– rose petals
– pistachio if desired.

For Spiking the Pineapple
– 1/2 cup white wine (optional)

INSTRUCTIONS:

For Spiking the Pineapple
– If going with the spiked version, soak the pineapple rings in white wine (or even vodka/rum) and 1 tbsp sugar for about 4 hours. 2 hours minimum, overnight maximum for a more intense infusion.

For the Cottage Cheese Topping:
– In a blender jar, mix together the chenna or cottage cheese, cream, honey till smooth. It will still be a little grainy but essentially mixed well.
– Add the orange zest and cardamom and mix thoroughly by hand.

For Making the Pineapple Sandesh
– Arrange the pineapple rings on a platter. Drain them of excess liquor.
– On top of each pineapple, spread the chenna mix in an even layer using a spoon and your fingers to smoothen it out all over the pineapple.
– Keep it the fridge for 30 mins to set a little bit.
– Next, all that’s left to do is layer it up , garnish it with saffron, coconut slivers,rose petals and almond flakes.
– Keep in fridge till serving time. Remove from fridge 20 mins before serving.
– Light up a few diyas or tea lights, dress up a pretty festive platter and go meet your guests like a queen!

Mouthwatering Milk Pedas:

And once you’re done with her recipe, you will enjoy the feeling of sharing these mouthwatering pedas with your friends and family.

INGREDIENTS:

–  2 cups milk powder
– 400 gm (1 can) condensed milk
– 1/4 tsp cardamom powder
– 15 strands saffron
– 1 tbsp warm milk
– 4 tbsp ghee + to apply on hand while rolling the peda

– In a small glass, combine the warm milk and saffron strands and let it rest
– In a heavy bottom non stick pan, add ghee. Once the ghee has melted add the condensed milk
– Using a spatula, mix the condensed milk and ghee well till you see bubbles begin to form on the side
– Add in the milk powder and move quickly
– Mix well and continuously stir till there are no lumps left. Using the spatula, press down on all the lumps and give it a good mix
– Next add the saffron soaked in milk and the cardamom powder and give it a good mix
– Cook the mixture till you see that it begins to form a single big lump
– Then take it off the heat and set aside to cool
– Meanwhile grease a plate with ghee and apply some on your hands too. Now slowly make small roundels with equal quantities of the mixture in the palm of your hand
– Set aside on the greased plate. This works well when the mixture is still warm and not too hot to touch

Once you are done with all the pedas, make small indent with you finger or use a stamp to make an impression on the top of the peda and place pistachio slivers, saffron strands etc. Your home made milk powder pedas are ready!

Rose Pistachio Coconut Fudge Balls

This is a very simple, last minute kind of festive ready recipe which will come together in minutes.

INGREDIENTS:

– 350 gm organic desiccated coconut + 50 gms extra for rolling the balls
– 125 gm Milkmaid condensed milk / coconut milk condensed milk to make it vegan
– 1 tbsp organic food grade rose water
– 4-5 tbsp roughly grounded pistachios
– organic food grade pink colour

3 Quick and Easy Diwali Sweet RecipesINSTRUCTIONS:

– In a heavy bottom pan add desiccated coconut and dry roast lightly for a minute or two on low-medium flame.
– Add milkmaid and mix well. Keep stirring till it all comes together, in about 5 minutes.
– Check the sweetness as per your preference. We prefer not too sweet. You can add a little more Milkmaid if you like.
– Add rose water, a little bit of pink colour and mix well. Check the consistency. You should be able to hold the dough and form balls. Keep aside to cool for a while.
– Form small balls, flatten on your palm. Add half teaspoon of grounded pistachio filling and roll into round shape balls.
– Finally roll your pink ladoos into dry desiccated coconut and store them in an air tight container in the fridge. These will keep good for up to a week in the fridge. (If they last that long!)
